A commercial ice machine buying guide usually starts and ends with one question: how much ice do you actually need per day? Get that number right and everything else — space, power, plumbing — falls into place.
Work out your daily output first
Ice output is rated in kg per 24 hours. A small cafe or home bar rarely needs more than 15–30kg a day. A busy bar, catering operation, or worksite crew supplying multiple eskies can chew through 45–60kg easily. Undersizing means running out mid-shift; oversizing wastes bench space and power for no benefit.
Countertop vs standalone units
Countertop ice makers (12–15kg output) suit tight kitchens, small bars, or home use — plug in, fill the tank, and go. Standalone commercial units (30kg+) need a water line connection and more clearance but produce continuously rather than in small batches, which matters once demand gets serious.
Stainless steel matters more than it looks
Anywhere food or drink is involved, a stainless steel exterior and ice bin are worth the small premium — easier to keep hygienic and holds up better in a commercial kitchen environment than painted steel.
Don't forget clearance and drainage
Ice machines need airflow around the unit to run efficiently — tight built-in cabinetry can cause overheating and shorten the compressor's life. Check drainage requirements too; some units need a gravity drain, others just a catch tray.
